I wasn’t feeling very motivated to cook last night, but you gotta eat! I was able to whip this together without much effort. It’s always good to have an “emergency” recipe that doesn’t involve a lot of preparation, and this is one of my go-to’s. A simple 5 ingredient recipe that you can alter based on your taste.
The Signature Ingredients
- 1 can of corn kernels
- 1 can of crushed tomatoes
- 1 can of black beans
- 1 can of re fried beans
- 1 can/carton of stock… preferably chicken stock, but veggie stock can be used as well
Empty the ingredients into a pot and heat it for about 10 minutes on medium high heat, stirring occasionally. Then serve.
The reason I call this “Nacho Soup” is due to the other bits and pieces that I add in post. A handful of grated cheese, and a handful of corn chips which you can throw in whole or crumble them in. On this particular night, I added some leftover guacamole (another recipe to add if anyone is keen for it) and chopped black olives.
This particular batch served 4 dishes and Owen was able to enjoy some for lunch today. Despite my love for this recipe, I rarely get the opportunity to whip it together since Owen has no love for it. But today, he demanded it! I’m hoping this continues on in the future 😉
